MY VEGETABLE EVERYTHING
INGREDIENTS
2 onions
1 capsicum
2 zucchini
1 bunch broccoli
4 red tomatoes
1 425g can pineapple pieces in natural juice drained
METHOD
peel onions and slice onions
slice capsicum zucchini, into strips
separate broccoli into mini heads
cut tomatoes into small wedges
drain pineapple pieces
in an electric fry pan on medium heat
heat a small amount of oil
add onions and gently sauté
add capsicum and sauté
add zucchini broccoli and ripe tomatoes and pineapple pieces
reduce heat and cover
simmer on low for 15 minutes stirring occasionally
You can use this for every thing separate and freeze into meal portions
put it on grilled chicken..fish...mix it with tuna I have even had it on toast
The above ingrediences are a guide only use your imagination
I cook larger amounts as its great for freezing.
At night I just cook a chicken breast or fish on the stove .
defrost a portions of MY EVERYTHING..and in 10 minutes my meal is ready
