Low fat Chicken strips with Sweet Chilli dip
Ingredients
1 cup cornflakes
1/3 cup instant polenta
2 tablespoons grated parmesan cheese
750 gram chicken breast
½ cup natural style yoghurt
Sweet chilli yoghurt
½ cup natural style yoghurt
2 tablespoons sweet chilli sauce
1 garlic clove crushed
Method
Preheat oven to 200c
Line 2 baking trays with baking paper
Place cornflakes in a plastic bag and crush with a rolling pin to desired thickness
Combine cornflakes, polenta, and parmesan cheese in a bowl
Place yoghurt in a separate bowl
Cut chicken into strips (your desired thickness)
Dip chicken strips into the yoghurt mixture, shaking of excess
Toss into crumbed mixture then arrange on prepared trays
Spray chicken with cooking spray, bake for 15 minutes or until golden and cooked through
Sweet chilli dip
Combine ingredients in a bowl
Enjoy your chicken and sweet chilli yoghurt with a small salad
